Yummy Passion Fruit Cheesecakes

Finally :-) I'm getting round to blogging ......
It's been a lovely weekend here in Welwyn Garden City
Today, I decided to make some lovely Passion fruit cheesecakes..... they are so tangy and refreshing !! Hope you enjoy them !

You can make these as individual or one large one. I made individuals mmmmm !!


Passion Fruit Cheesecake




Ingredients

125g of Hob nobs + digestives
55 g butter
4 large passion fruit
250g tub of quark
zest and juice of one large lemon
1/2 tsp vanilla essence
1 sachet of gelatin
350 ml double cream
75g white chocolate

Method

1. Melt the butter in a pan. Whizz biscuits in a food processor and add to the melted butter.

2. If making individual you will need six 8cm food rings or 20 cm tin for a large one. Grease33 rings/tin and divide the biscuit base mix into them , pressing down well. Chill.

3. Make the filling. Mix quark, vanilla essence,  lemon zest and juice. put 2 tablespoons of water in a small bowl, sprinkle the gelatin powder on top and microwave for 30 seconds, add this to the quark mixture through a sieve whilst stirring, set aside.

4. Meanwhile, whisk the cream to soft peaks and then add the quark mixture to the cream and whisk, melt the white chocolate and add to the mixture, give it one last whisk to make sure all ingredients are combined.

5. Pour into the food rings or tin prepared earlier and flatten with a palette knife. Chill in fridge for at least 4 hrs.

6. When ready to serve run a knife around the edge of the moulds/tin to release the cheesecakes. Serve with the juice and seeds of the passion fruit.
